Yoshoku refers to dishes that originate from Western cuisine but have been skillfully adapted to suit local tastes and ingredients, creating unique meals that are distinctly Japanese. Unlike modern fusion concepts, Yoshoku has become a core part of Japanese cuisine, alongside traditional dishes such as sashimi, sushi, and kaiseki, which have become well-known worldwide. Similar to how banh mi, despite its origin from the French baguette, has become an integral part of Vietnamese cuisine, Yoshoku represents a “democratized” and “localized” version of high-end Western dishes that were introduced to Japan during the Meiji era, and it has since become an important part of the everyday meals of the Japanese people.
